    Spiced Pumpkin Soup

    This is a Colin Cowie recipe from Oprah Magazine. It is always a BIG hit!

    Ingredients:
    4 Tbsp unsalted butter
    2 medium onions (yellow or white) chopped
    2 tsp minced garlic
    1/8 to 1/4 tsp crushed red pepper
    2 tsp curry powder
    1/2 tsp ground coriander
    pinch ground cayenne pepper
    3 (15-ounce) cans pumpkin
    3 (14 1/2 ounce) cans chicken broth
    2 cups milk
    pumpkin seeds (optional)
    olive oil or other cooking oil for brushing

    Instructions:
    1. Preheat oven to 375 degrees.

    2. Melt butteer in 4-quart saucepan over medium-high heat. Add onions and garlic and cook, stirring often, until softened (approx 4 min). Add dry spices and stir about 1 minute.

    3. Add canned pumkin and 5 cups broth; blend well. Bring soup to a boil and immediately reduce heat, cooking at low simmer 10-15 minutes. Add milk and stir until heated through.

    4. (optional step) Tranfer soup to food processor, blend until smooth. Return to saucepan and heat.

    Serve and sprinkle pumpkin seeds on top.

    You can use the leftover soup on broiled salmon with winter greens.

    Makes 8 servings.
